This is "As-You-Like-It" pancake, or Okonomiyaki in Japanese.
We can eat a lot of vegetables at once, which is good for the health and diet, and it tastes very delicious, I'm sure.
Ingredients 2 pancakes
* 80g (2 4/5 oz) grated Yam
* 50g ( 1 3/4 oz) Hakurikiko flour
* 160cc (4/5 U.S. Cup) water
* 1 tsp powdered dried bonito
200g (7 oz) cabbage
2 Tbsps deep-fried tempura batter
10 thin slices of Pork belly
2 eggs
Directions
1. Rinse the cabbage in cold water, and cut into julienne strips. Peel the Chinese yam, and grate. Cut the pork belly slices into 1/16-inch wide pieces.
2. Place * into a bowl, and mix well to make batter.
3. Add the cabbage deep-fried tempura batter and egg to the bowl, and mix well.
4. Heat the hot plate ( or frying pan) to 400F, add some vegetable oil.
Pour the batter mixture in 3 above onto the plate, place slice of pork on top of it . Heat for about 3 min.
5. Turn the pancake over, and heat about 5 min. Reverse again, and heat for about 3 min. Reverse again.
6. Spread the okonomi sauce all over the surface of it. Put on some mayonnaise, and sprinkle on the green laver.
Shrimps, squid, kimuchi Korean pickles, cheese, rice cakes can also be added as fillings.
HIROSHIMAYAKI ( with cabbage, bean sprouts and noodles )
OMUSOBA ( the inside is Japanese-style Chow Mein, or yakisoba )
